if you are using a tripod you can use the independent legs to set the pan rotation to the same plane as the road so you are panning the cars at the same level.
you will need a tripod head that has a separate pan knob, its mostly the cheapest / smallest ball heads that only have one know for everything loose.
if you have a specific location in mind and are pretty handy at making stuff you can make a swing axis to suit your pan needs

other than that its down to skill, using your whole body to pan with rather than just your head / hands will help.

with the longer lens i'm sure you have noticed the ability to keep something in view gets harder the more zoomed in you are, practice body movement tracking at low to medium zoom.

if you have a sweet spot in what you need maybe a shorter zoom range lens might be a good idea rather than a big lens covering all the range, might be easier to handle.

other options for panning support: mono pod or magic arm and clamp if you know you will have alot of fencing etc to clamp to.

if you have the choice pick areas of the track that are best suited to you skill level in panning, ie straight runs rather than curves that from a panning point of view need an up down imput as well as left right

you probably want a high shutter speed because there will be two moving objects, you and the car/bike,

failing that wait for the R3 it will have race car tracking
